COGITO green coffee beans are transparently sourced from tropical growing regions around the world. A portion are purchased seasonally by specialty coffee traders in Europe, and in 2019 we were thrilled to add our first 2 directly traded coffees – from producers Carlos Montero and Daniela Gutierrez in Tarrazú, Costa Rica. We pay premium prices because we believe it is essential that coffee producers are compensated fairly for high quality beans.
The commitment to quality extends from tree to cup: coffee trees must be planted and tended with great care and skill. Coffee cherries should be handpicked at the height of ripeness to ensure proper sugar content. Processing, whether wet or dry method, must be executed in precisely the right way. Storage, shipment, roasting, cupping, grinding, extraction – each step is vital in order to achieve the best-tasting final cup.

Coffee is a fruit
After being harvested from the coffee trees, the coffee fruits – commonly called ‘cherries’, though they are actually a stone fruit – must be processed. There are various ways to do this, but the goal of each method is to separate the internal seed from the surrounding pulp and outer skin, while gaining tasty flavors from the fermentation steps along the way. Typically, each fruit contains two seeds which are called ‘beans’. When the seeds are adequately pulp-free and dry, they can then be hulled, roasted, ground, and brewed.
